First steps in cooking
As a child, he wanted to become a skateboard champion, but,
a few years and a broken leg later, he finally realised cooking
was a safer way to earn a living.
Since he finished his training with the England hotel in
Copenhagen in 1997, Rasmus Kofoed’s CV mentions only top-ofthe-
range establishments: Scholteshof (two stars) in Belgium,
Kommandanten (two stars) in Copenhagen, gourmet restaurant
Frederiksberg… until the opening, in 2007, of his restaurant
„Geranium“, in Copenhagen.
Training for the Bocuse d’Or
In 2005, at the time of the last edition of Bocuse d’Or, Rasmus Kofoed was already
one of the 24 candidates. Better still: at the end of the last two days of the
competition, he was awarded the bronze medal, 24 points behind the winner
(382 points separated the winner from the last place).
„Bocuse d’Or is one of the best memories of my career, he tells us. When I returned
to Copenhagen, I decided that I wanted to return as soon as possible. I
have been training ever since, much harder than the last time.“
Outside the kitchen
When not working, the Danish candidate likes to travel, play football, spend
time with his friends and to eat in restaurants, where he spends all his money!

What does his mother
think of his cooking:
„My mother thinks that I
devote too much time to
gastronomy, but she is still
very proud.“
If he were a utensil,
he would be…
„a knife, because I try to
be very precise in my
cooking. In my spare
time, I would be blunted,
because my cooking is
much simpler and
relaxed when I’m not
working.“
His commis
His assistant commis will be Ronni Mortensen.
