Chef at the restaurant Matignon, Shangai
1990 : Peace Hotel in Shanghai
2001 : Shanghai International Convention Centre

First steps in Cooking
Jinghui Ju imagined, as a child, that the kitchen was a magic
tower for transforming simple ingredients into gastronomic
delights.
Later, in the corridors of the Peace Hotel, it was under the chefs
Zhi Ming Li and Yu Fan that he learnt the secrets of these culinary
enchantments.
Since then, many politicians, many stars of show business and
sport, have tasted his creations.
Training for the „Bocuse d’Or“
Jinghui Ju, who is very honoured to have been selected to represent China at
the „Bocuse d’Or“, takes his training very seriously. Coached by the Frenchman,
Robert Fontana, he creates unusual fusions and associations.
The Chinese candidate has even come to Europe for almost a month to practise
his art in Norway, in France and in Belgium.
To perfect his training, he even took part in a competition using sea food in
Norway, and profited from it by meeting several high-ranking chefs.
Outside the kitchen
When he goes home after midnight, when everyone else is sleeping, chef
Yinghui Ju likes to spend time on the internet – his favourite pastime is surfing the
net.
Between us…
Yinghui Ju speaks
Chinese and English
What his mother thinks of
his cooking :
„She wants me to be
happy, not only in my
career, but also in my
spare time, because she
knows that being a chef
is a difficult profession.“
If he was a product, he
would be…
“ the most ordinary thing
of all, in order to test the
talents of the chef who
has to cook me.“
